An easy maggi recipe, for when you are in a hurry

Tuesday morning dawned at our household and I was feeling lazier than usual. The prospect of making the traditional Kerala idli and chutney was too much to think, forget cooking. Given the fact that the clock was ticking and hubster needed to leave soon for work, I began to think of an easier way out....

A quick scout through the emergency stock pile and my eyes landed on my forever favorite, Maggi. But then this was breakfast, just a packet of Maggi wont work, I know. So I decided to add more stuff to it and make it a healthier and fuller dish.


As I said the clock was ticking and taking pictures of each step was obviously forgotten!!! But I did take a pic of the end result of my experiment :)


So here we go with the recipe. (this feeds 3)


Ingredients

  • 4 packets of Maggi (including the tastemaker)

  • 1 onion( medium) - chopped

  • 1 cup - green peas (steamed)

  • 1 cup - carrot (steamed)

  • 1 cup chicken ( cut to bite sized pieces)

  • 1/2 table spoon black pepper and another 1/4th teaspoon

  • 1/2 teaspoon meat masala

  • Salt for the vegetables and chicken

  • 1/2 tablespoon oil

  • 1/2 tablespoon butter

  • Hot water - as per instructions on the maggi packet

Method

  • Marinate the chicken with salt and 1/2 tablespoon black pepper.

  • Put oil in a pan, once the oil is heated add in chopped onions

  • Once the onions are translucent, add in the chicken, ensure that the flame is on high, you want the chicken to sear.

  • Once the chicken is cooked thru - which would literally be in minutes bring the heat to medium and add in 1/4 teaspoon black pepper and 1/2 teaspoon meat masala. Give it a good stir and ensure that the masala is cooked well.

  • Now, add in the green peas and the carrot. Cook for 1/2 minute

  • Add in hot water as per instructions on the maggi packet and also add in the tastemaker.

  • Bring this to a boil. Add in the maggi, once the maggi is cooked and the water is almost evaporated, add in the butter - the flame should be on medium high at the point.

  • Another minute on the flame and breakfast is ready.

For vegetarians you can substitute chicken with Paneer (cottage cheese) and if you like eggs then you can add in a scrambled egg instead of chicken or you can add both :) Other than the above mentioned veggies you can also go ahead and add any veggies of your choice. Remember this is Maggi and everything that comes with it is relished so add as much veggies as you can ;)


The above mentioned recipe is in no way an invention by me for sure, but I just wanted to put this out there, for those days when nothing clicks in the morning and you are in a hurry; or for a late evening snack as soon as you come back from office.
